Eating out in London, can be both expensive and unsustainable as the restaurant industry
is famously one of the worst offenders in creating waste. What if we told you, you could eat
inexpensively, organically, and with limited waste on your lunch break?

Situated in the famous October Gallery in Holborn is a tiny unassuming café run by a
young chef, Adrien Dubuis, focused on serving simple food using only local and organic

so you may never get the same dish twice. His dishes range from jerk rice bowls to succotash to
kimchi jjigae – you are always in for something interesting!

All of the café’s food waste is turned into compost for the chef’s personal garden.

Dubuis only makes a certain amount of food daily to limit any waste, so if you don’t get
there in the first hour of service, you may miss your chance. All of the café’s food waste is

herbs are grown for the café. Additionally, the chef and his wife spend their weekends creating
their own vinegars and foraging for fruit to make homemade jams and jellies, which Dubuis sells
at the café. Besides the fantastic food and organic wine, you are able to eat right next to stunning
African art by legendary artists such as El Anatsui, Rachid Korachi, and Romauld Hazoumè.
