Potato Curls with Shredded Brussels Sprouts, Sour Cream & Seaweed Caviar

 

This recipe is perfect to be enjoyed as a side dish for many or as a main course for one!

 

You will need:

2 regular potatoes or 1 sweet potato  

4 brussel sprouts  

2 Labneh cheese balls  

2 tablespoons of creme fraiche   

1 tablespoon of olive oil  

2 teaspoons of seaweed caviar   

1 teaspoon of salt  

4 decilitres of organic olive oil 

 

The method: 

Pour 4 decilitres of olive oil in a pot and heat the oil until it bubbles.

Place the potatoes in the oil and let them simmer until crisp.

Meanwhile, shred the brussel sprouts, mix the Labneh cheese with the creme fraiche and remaining oil until smooth.

Take the potatoes out of the oil and place on a paper to get rid of some of the fat.

Spritz some cheese dressing on a plate, then add the potatoes, brussel sprouts, more dressing, seaweed caviar and salt.   

Enjoy with a chilled glass of orange wine or a Seabuckthorn mocktail! 

 

Tip: If you are vegan, switch the cheese and creme fraiche to vegan options. If you have a spiralizer, use it to make the potato curl. If not, it’s better to chop the potatoes super thin!
