I prefer to eat seasonally – supporting my local farmers to see what they are growing instead of buying produce and ingredients from too far away. Supporting organic and biodynamic farms, means your produce contains far more health benefits than conventional veggies and meat. I always opt for local and organic meat, wild fish from my local day boats, and local grains where possible! For my family, our meals need to balance affordability, speed, and the ability to please even my 3 year olds palate but not be boring for my husband and I.

A Healthy Family Dinner Recipe from Taylor!

 

Adrien’s Pork Belly Lettuce Wraps with Seasonal Vegetables – 

 

Serves 4

 

Ingredients:

 

Pear ssamjang sauce :

150 grams doenjang / miso

30 grams gochujang

1 pear / apple, coarsely grated

2 garlic cloves, minced

2 spring onion, finely sliced

1 tbsp toasted sesame oil

1 tbsp vinegar

1 tbsp sesame seeds

 

1-2 heads lettuce

1 cucumber, julienned

2 carrots, julienned

5 spring onions, julienned

300g rice

800g of pork collar steak / mince / tenderloin

Coriander, finely chopped

 

Instructions:

 

To make the sauce, combine all the ingredients in a bowl. This can be made in advance and will store in the fridge for up to 2 weeks.

 

Separate the lettuce leaves and wash them. Arrange on a platter with the julienned carrots, cucumber, spring onions.

 

Cook your rice and barbecue / pan fry your pork to your desired doneness before encouraging your guests to build their lettuce wraps with a small spoon of rice, some vegetables, pork, sauce and coriander.
