Chamomile & Coconut Yogurt Bake with Berries
I have been enjoying this quick bake with family in the afternoon or morning coffee with a pinch of cardamom, which came back into my life after having my first baby.
I love chamomile. We used to have an abundance of it in front of our window growing up as a little girl. We would pick it and dry it to make fragrant herbal teas in winter. Chamomile is commonly used for attraction, magic and luck back home. It is also used as a charm or in mojo bags for money, peace, love, tranquility and also for purification. There are some many great connotations behind this herb.
I use Chamomile in my Naturopathic clinic for calming, quieting, and reducing stress responses in people who are struggling with restlessness, irritability, or any other nervous system issues. In a physical sense, chamomile is anti-fungal, anti-inflammatory, anti-viral, antispasmodic and is used for indigestion and gas. It is also beneficial as a gentle sleep aid and sedative. I definitely prescribe people with menstrual cramps, ulcers, safe for teething children, and internal pain to use chamomile for a natural treatment. It’s also a very gentle herb that is safe for breastfeeding and pregnant mothers too!
Ingredients
You can choose any berries you like!
2 cups of coconut flour ( or any other gluten free flour)
1 cup almond flour/almond meal
1/2 cup coconut yogurt
1/2 – 1 cup strong chamomile tea brew
1 tsp vanilla extract
1 cup sweetener of your choice ( brown rice nectar, honey, coconut nectar or maple )
1 tsp bicarb soda
3 eggs ( or flax eggs )
1/3 cup olive, avocado or grapeseed oil
Pinch of salt
Berries of your choice: blackberries, blueberries, strawberries, raspberries, etc.
Method
Blend dry ingredients and wet ingredients in seperate bowl. Keep berries aside.
Combine the mixtures when ready. Coconut flour will absorb liquids and make the mixture thick so add more coconut yogurt and chamomile tea if it is too dry. The mixture should be thick but a good wet consistency to press it into the baking form.
Once you have the perfect texture ( it won’t be as runny as if you bake with normal flour) press into form your choice, cover with berries and bake at 180-200 celsius in the oven for around 40 min. Serve warm or cold!
