Tree Planting Week: A Holiday Cocktail With Sapling Spirits
This recipe is brought to you together with Sapling Spirits.
We’re super excited to be collaborating with Sapling Vodka to bring you a series of REV winter cocktails over the coming weeks. We have put together a special collection of cocktails celebrating the wonderful Sapling Vodka (which is distilled in London with British wheat), coupling it with seasonal fruits and herbs from my kitchen garden.

Don’t put your vodka bottle away just yet – winter is coming. There are many reasons we love the changing of the seasons as we slide from autumnal mellowness into festive winter cheer: the final turning of the leaves, the crisp breeze, the ever shrinking daylight, the wool jumpers and of course, the shift to wintry frosty mornings that somehow pushes us to trade in our standard cocktail fare for something more cozy and warm.
In my case, making a vodka cocktail at home is a central part of my cozy winter rituals, so I am delighted to share with you a really perfect way to enjoy your upcoming festive nights at home with seasonal fruits juices, coupled with warming spices to make a delicious cocktail from the game changing low carbon vodka – Sapling.
The delicious Sapling vodka comes from sustainably focused distillery based in west London where caring and protecting the environment is at the heart of its mission. And, for every Sapling bottle you purchase, a tree will be planted in your honor! That’s what I like to call a conscious cocktail…
Make the Cocktail
Ingredients
5 or 6 ice cubes
60ml Sapling Vodka
30ml fresh apple juice (best from Granny smith apples!)
Juice of half a lemon
Sparkling soda water or tonic
1 slice of lemon
Bay leaf to garnish
Cinnamon stick
Method
Pour out a double shot of Sapling Vodka then squeeze half a lemon over lots of ice into a cocktail shaker.
Add 30 ml apple juice and top up with tonic and pour into the shaker.
Shake well with crushed bay leaves for at least 30 seconds then pour it into a tumbler and stir with cinnamon stick.
Serve with a slice of fresh lemon and a freshly pick bay sprig.

How we're dressing up at home!
Changing out of loungewear does wonders for our mood! We are still choosing to dress up despite staying in…but our outfits have got to be comfortable – that’s non negotiable!
Our favourite summer trousers we are still wearing in Winter – The Wylde’s Lucette pants are made from 100% natural linen and are just one of the beautiful pieces in their carefully curated selection of trans-seasonal fashion!
We’re painting them with the Sabi earrings from Soko which are ethically handcrafted from recycled brass by artisans in Kenya using traditional techniques.
